Ever since I was young, I have loved anything that involved mint and chocolate.

Thank goodness holiday recipes use this combination in so many delicious ways. These brownies have a rich minty chocolate flavor with mint-marshmallow creme swirled in the brownies and mixed in the frosting.

Ingredients needed to make Mint Oreo Cookie Brownie Bars:

  • Marshmallow creme
  • Mint extract
  • Green food coloring
  • 1boxbrownie mix
  • Water, Vegetable Oil and Eggs called for on the brownie mix box
  • White chocolate chips
  • Vanilla frosting(I just used store bought, but you could also use your favorite homemade recipe)
  • Mint creme Oreo cookies

I am a huge mint Oreo fan. Really just a mint and chocolate fan. However, I understand they aren’t for everyone. My husband is personally not crazy about the combination, because he thinks mint should only be found in gum or breath mints. Which I totally get.

So if you are looking to switch out the mint Oreo’s, and use a chocolate or vanilla frosting, instead of mint, here is what we recommend trying:

  • Regular Oreos (or really any of the other Oreo flavors. These would be delish with the cake batter Oreo’s).
  • Candy (It would be delicious with, Reese’s, Snickers, Twix, Milkyway, M & M’s, Butterfingers, Reese’s Pieces, Kit Kats, etc.)
  • Marshmallows
  • Toffee Bits
  • Pecans or another favorite nut.
  • Sprinkles

These Mint Oreo Cookie Brownie Bars are easy to make and the perfect combination of chocolate and mint. They are so easy to make, and the Oreo cookies are just the cherry on top.

Ingredients

  • 7 ounces marshmallow creme 1 container
  • teaspoon mint extract
  • 8 drops green food coloring
  • 1 box brownie mix (has to be the 9×13" pan size)
  • Water, Vegetable Oil and Eggs called for on the brownie mix box
  • ¾ cup white chocolate chips
  • 1 cup vanilla frosting (I just used store bought, but you could also use your favorite homemade recipe)
  • 18 mint creme Oreo cookies coarsely chopped (3 cups)

Instructions

  • Heat oven to 350°F. Spray 13×9-inch pan with cooking spray. In medium bowl, stir together marshmallow creme, mint extract and 4 drops of the food color until light green.

  • In large bowl, make brownie mix as directed on box, using water, oil, and eggs. Spread batter in pan. Drop 4 or 5 large tablespoonfuls of marshmallow mixture onto batter (reserve remaining marshmallow mixture). Gently pull table knife through marshmallow mixture and batter in S-shaped curves in continuous motion for marbled design. Spread evenly in pan.

  • Bake 25 to 28 minutes or until set. Cool completely, about 1 hour.

  • In small microwavable bowl, microwave baking chips on High 30 seconds; stir. Microwave 30 seconds longer; stir until smooth. Stir melted chips and frosting into remaining marshmallow mixture. Stir in remaining 4 drops food color until light green; spread over cooled bars. Sprinkle with cookies; press in slightly. Cut into bars.

    I just made these. They're yummy, but falling apart they're so gooey. The brownie mix had the option to make fudgy brownies or cake brownies. I went with fudgy. Should I have gone with cake? Or are they supposed to be extra-gooey? Thanks.

    Thanks for the recipe. Mine turned out great and didn't last very long.

    To the one poster whose were falling apart. I added another cup of the white chocolate chips and made my own icing a littler thicker than I normally would. That gives it a little more constancy and should fix any falling apart that might occur.

    I googled egg substitute for you and here are a few things that popped up....
    You can substitute three tablespoons of mayonnaise for one egg in baking. The recipe I wanted to use called for two eggs, but I only had one. I subbed the mayo for the other egg, and the pumpkin muffins I baked were no different than usual. Or, you can mash half a banana with half teaspoon of baking powder.

    I have also heard of substituting 1 egg for 1 mashed banana.

    I recently purchased your Sweets and Treats cookbook. This recipe is in there, but calls for 2 boxed mixes instead of 1, while still baking in a 9x13 pan. Which will I get the better results with? Or is one of the recipes a mistake?

    Hi Dee. This is so weird. I had to go pull out my book to see for myself. I'm so baffled on how this slipped through in the book. I would follow what the website says. The difference is that the website says to use the big brownie mix and add the ingredients that are listed on the back of the box. The cookbook says to use 2 brownie boxes and then add certain amounts of water, oil, and eggs. Which are a different amounts than if you were to use one brownie mix. I talked to Camille and she's not sure what has happened with this recipe. We both agreed to stick with the website SixSistersStuff for the recipe. We might have to make the cookbook version of these over the weekend and see what happens using 2 brownie mixes. Maybe they'll be super thick brownies. Thanks so much for the heads up on this recipe.
