I have created a lot of keto chicken recipes lately. My current focus on low carb high protein recipes has this easy ingredient front and center in my mind.
Of course, I’ve always loved chicken, and with good reason. It’s relatively inexpensive, simple to prepare, and it always tastes fantastic. Assuming you don’t overcook it, of course! And it’s packed with nutrition. Besides the high protein content, chicken is a great source of potassium, selenium, and B6 vitamins.
I tend to favor the thighs over the breasts and my freezer is almost never without a few packs of chicken to feed my hungry family.I usually keep boneless skinless thighs and bone-in thighs on hand for whenever I feel inspired. But if you prefer the breasts, you can always sub those too. In almost all of these recipes, you can switch it up and use what you like best.
How to cook chicken at home
There are so many wonderful ways to prepare keto chicken recipes. You can cook it on the stove top, in the air fryer, or in a slow cooker or instant pot. And I have some delicious oven-baked or grilled recipes as well.
It’s also ideal for meal prep because you can cook it ahead and warm it up as needed. We like to make a big batch of grilled chicken for easy salads all year long.
And it goes with just about any flavor profile you can think of. It’s delicious with a multitude of spices, herbs, dressings, or sauces. My Sugar-Free BBQ Sauce is a fan favorite for both chicken and ribs!

Thank you for posting this!! I have alpha-gal allergy–a tick bite-induced allergy to a sugar molecule found in mammal fat–so no beef, pork, lamb, etc for me. So many delicious keto recipes focus on those meats, and sometimes all the “fins and feathers” get a little boring. So it is always nice to find new recipes to try!!

This is a great post. I found a bunch of recipes that I want to try – especially the Alfredo pizza. Chicken is a food I no longer want to eat, because I ate too much of it for years, in an attempt to be healthier. Ditto for canned tomatoes. But I have been able to enjoy chicken that is smothered in sauce. I’m also very intrigued by your pot pie recipe. Thank you for inspiring me to want to eat chicken.

Hi Carolyn,
I absolutely agree it’s time to get back to eating all the good fat that we need. I’m writing to thank you for pulling all these recipes together (I love chicken thighs) but am disappointed that so many of the recipes specify (or prep to) boneless, skinless thighs.

I think that boneless and skinless have their rightful place. This isn’t about progress in low carb high fat, but what the actual chicken recipe is about. For example, in several of mine, I chose boneless and skinless because I am smothering them in so many other things that it’s easier for the eater to cut them up and eat them if they don’t contain bones. Think of it that way…although you are always welcome to try the full chicken thighs, if you wish.

I don’t disagree.
I’m just hoping that the wonderful recipe-creators will begin to work with the whole thigh. What I’ve found is that few recipes result in a tasty skin/fat. Rather it frequently becomes unappealingly rubbery. (Duck parts have a similar problem).
So – how about a culinary competition looking for tasty Low-carb whole thigh recipes?

I was going to say…the smothering in things (which I love to do…mmmmm, cheese!) does tend to result in rubbery skin. So that’s another plus for the skinless in some recipes. But have you tried the bacon sun-dried tomato cream sauce one? I tried one way and it steamed the skin after being browned and wasn’t good. So then I braised it all in the oven. Much better! Not crispy but not rubbery at all.
